I love the little mappy thing..

I love the little mappy thing so I can see where people are looking at my blog from...I am feeling much better now. I think I am finally starting to sleep better. My leg is still gross but getting better...

Here are some of the newer items I have made. My friend's twin sons are turning 1 at the end of the month so there is a project I need to complete.





I am kinda of slow sometimes and let dan's cottage pie out overnight to defrost (oops!) so I gave him these for lunch @ work today. They are super yummy!

Greek Stuffed Footballs (Could be made veggie friendly I'm sure)

These are great to defrost in a jam..

1/4 cup uncooked brown rice
1 package pound ground meat ( I use ground turkey a lot)
1/2 Cup chopped onion
chopped bell peppers 1 or 2
2 cloves minced garlic
1/2 tsp dried oregano
1/2 tsp dried thyme
1 egg separated
1/2 tsp beef flavored granules
1/4 tsp allspice
1/4 teaspoon pepper
1 1lb loaf frozen white bread
Cooking Spray
1 tsp water
1 1/2 tsp sesame seeds

Thaw bread according to package directions. Spray with cooking
spray and place bread in a large bowl and let rise in a warm place
until it doubles in size. Follow cooking directions for rice, make and
put to the side. Combine meat, egg yolk, onion, garlic and spices cook
until meat is browned and onion is tender. Remove from heat, stir in
rice. Divide bread dough into 6 equal portions, roll into 7 inch
circle, place 1/2 meat mixture in the middle. Shape into an oblong
ball, use egg white mixture to seal seams. Place on baking tray seam
side down, brush top with egg white, add sesame seeds. Bake at 400
for 18-20 minutes or until golden brown.

Turkey Burgers

1 lb. or more lean ground turkey meat
1/2 cup to 1 cup chicken stock (keeps it really moist because the turkey has little fat and can get dry)
garlic salt ( to taste)
onion salt ( to taste)
1/4 parmasean cheese
1/4 seasoned breadcrumbs
1 egg

1. Add turkey meat to mixing bowl, add all ingredients except chicken stock
and mix well.
2. Gradually add chicken stock ( the turkey meat for some reason stays super
cold) and mix well ( I use my hands).
3. Form into patties and cook on the grill or stove about 15 minutes. Burgers
will be white when done.

I am still addicted to Planet Green. I wish they had more new shows though.
