Gazpacho..MMMM My Favorite


Ok so this is one of my all time favorite recipes especially for the summer since it is a cold soup. Since I have been pregnant I have been craving gazpacho, unfortunately from weeks 6 until 21 weeks I suffered such bad morning sickness ( every afternoon and evening) that tomato's were not my friend at all, I really wanted to eat pizza, spaghetti and gazpacho. I think I am truly craving salt but I have begged my mom to make gazpacho and we all knew what would happen if I ate it.

I was telling Dan on the way to work today it is such a fresh smelling soup. I still have morning sickness but we are going to my parent's friends house for dinner and I made it last night. I am 24 weeks on Sunday so I figured it would be safe to try it. I ate some after I made it and felt the heartburn kick in immediately. I tasted it this morning and it was sooooooo good. I could eat the entire bowl (it's HUGE). I am taking Zantac for my heartburn ( turns out my doc didn't like me taking 10 Tums a day) and I am going to take another before dinner so I can eat it later.

Here is the recipe:

Gazpacho Recipe
This is my favorite soup. Please add/delete ingredients to your liking.
5 ripe tomatoes
1 bell pepper ( I use yellow or red because they are sweeter)
1 cucumber ( take the seeds out)
1 large onion ( maybe 2)
garlic ( fresh I usually put 3 cloves)
1/4 cup lemon juice
cumin-to your liking
cayenne-to your liking
salt -to your liking
olive oil ( recipe asks for two tablespoons, I don't use much)
1 can tomato juice

Put all ingredients in a food processor, chop to your liking. I can't fit it all in
one time so I do it 2 or three times, dump it all in a big bowl and add the
entire can of tomato juice, but you do not have to. Do not eat until the next
day and make sure it is very cold. Some people add sour cream (will kill the
bite if you were cayenne happy), and croutons.

I craved oranges and orange juice something fierce. I know now that it was the folic acid I needed for the neural tube development. I also had very serious "morning" sickness which seemed to be set off by pretty much everything and once started wouldn't stop until long after my tummy was cleared of all possible contents. Then came the constant heartburn. Perhaps needless to say my daughter is an only child.

I've learned so much more about nutrition since then and I'd say there is a reason for your tomato cravings which probably have to do with vitamin c, folate (folic acid), lycopene and more. If I could go back in time I'd eat so much better than I did not just during my pregnancy but before and after. That would include dropping out as much of the meats, gluten and dairy as I could as those were causing the most problems (and later with breast-feeding and the worst colic anyone had ever heard of -- 13 straight hours of very distressed crying).

So eat well, eat all the veggies and even fruit that you can stand. You and your baby will thank you for it for years to come.

As to the heartburn, one of the things that was helpful to me was to not drink any liquids during the meal, nor before or after for at least 30 minutes or so. With the baby pushing up on the inside organs there isn't as much room in the tummy and liquids dilute the stomach acids needed to break down the foods (veggies and fruits are the easiest to digest so that's good) which mean the extra liquids actually make things worse when dealing with heartburn.

Try some probiotics too. Wildwood has a terrific organic blueberry soy milk that I've found is very helpful for the tummy troubles my daughter is going through as a side-effect of some antibiotics she was put on. I love it too. Just a few sips before each meal really helps.

Add some kale to the soup (or put in fruit smoothies) to give a good boost of calcium and iron as well as lutein and use flax seed oil (maybe garlic infused for the gazpacho) for extra Omega 3 (great for brain development) instead of the olive oil and it will be super good food for everyone taking part. :)

I didn't put any olive oil in this batch. It was so good. I ate it on Friday I think I have about 6 1/2 way filled 6oz solo cups of it..soooo good.
